A healthy and filling muffin.
1 1/2 cups of oatmeal
1 1/4 cups of Stone Bridge Flour Everyday Flour
1/2 cup of sugar
1 1/2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/4 cup olive oil
1 tsp vanilla
3 whole medium to large ripe bananas
*oatmeal, sugar and cinnamon for sprinkling on top
Preheat oven to 375°F
In a large bowl mix oatmeal, flour, baking powder, baking soda, cinnamon, salt and sugar together.
In a smaller bowl mix egg, oil and vanilla. Add to dry ingredients and stir. Stir in bananas Divide into 12 sprayed or lined muffin tins.
*Grab a pinch of oatmeal, then sugar and then cinnamon and sprinkle on the tops.
Bake at 375 for 20 minutes
Makes 12 muffins.
Great for eating within a day or two, or freezing too!
